Berry Good Cranberry Muffins A Wonderful Valentine's Day Treat!
Ingredients: 1 1/4 Cup of Flour
1 Cup of Uncooked Oatmeal
1 Tablespoon of Baking Powder
1/4 Cup of Canola Oil
2 Large Eggs
1/4 Cup of Honey
1 Small Container of Low-Fat Plain
1/2 Cup of Milk
1 Cup of Cranberries (I used frozen)
Pre-heat oven to 375 degrees. Prepare muffin pan
by spraying with vegetable spray (such as Pam).
Stir together flour, oats and baking powder. Next,
slowly add the milk, honey, yogurt, eggs and oil.
Finally, add the cranberries to the batter and mix
well. Fill each muffin cup with batter and bake for
25 - 30 minutes. Remove from the oven when
toothpick inserted in center comes out clean. Cool
